Why won't my Turkish coffee foam? 7 causes and fixes

The most common reasons Turkish coffee won't foam: stale coffee, warm water, high heat, stirring while it brews and the wrong cezve. A quick fix for each, plus a recipe for a foamy cup.

The most common reason Turkish coffee won't foam is stale coffee. Next come starting with warm water, high heat, stirring while it brews, letting it boil, a wide cezve and a coarse grind. A few small changes are usually enough for a thick, lasting foam.

How the foam forms

The foam is made of flour-fine coffee particles, the coffee's oils and the gas fresh coffee releases, gathering on the surface as the water slowly heats. That's why fresh coffee, cold water and gentle heat work together.

7 causes and how to fix them

  1. The coffee is stale. Freshly roasted coffee carries gas that helps the foam; stale coffee has lost most of it. Use coffee with a recent roast date and finish ground coffee within two weeks.
  2. The water is warm. Always start with cold drinking water. Warm or hot water brews the coffee before the foam can form.
  3. The heat is too high. Use low or medium-low heat. On high heat the foam rises fast and collapses.
  4. You stir while it brews. Stir coffee, water and sugar once at the start, then leave it alone.
  5. It boiled. Take the cezve off the heat as soon as the foam rises. Boiling breaks the foam and makes the coffee bitter.
  6. The cezve is too wide. Choose a narrow-necked cezve that fits the number of cups, about 70 ml per cup.
  7. The grind is coarse or there's too little coffee. Turkish coffee should be ground as fine as flour. Use about 7 g per cup (a heaped dessert spoon).

Recipe for a foamy cup

  1. Per cup: 70 ml cold water and 7 g Turkish coffee; add sugar now if you like.
  2. Stir once and put the cezve on low heat.
  3. Wait patiently as foam gathers at the edges.
  4. When the foam rises, take it off the heat and share the foam between the cups.
  5. Warm the cezve briefly once more and pour the rest slowly.
